Miniature Broccoli Cheddar Soup

 

Ingredients

4 tablespoons butter ½ stick
½ medium onion chopped
2–3 cloves garlic minced
4 tablespoon AP flour
2 glasses moo sodium chicken or vegetable stock
1 tsp legitimate salt
½ tsp dark pepper
¼ tsp paprika or ground nutmeg, optional
3 glasses broccoli florets or 1 expansive head, cut into little pieces
1 expansive carrot ground, julienned or finely chopped
2 mugs half & half or drain or light or overwhelming cream
8 oz square ground cheddar cheese or 2 mugs (gentle, medium, or sharp )

Instructions

 

Melt butter in a huge dutch broiler or pot over medium-high warm. Include the onion and cook 3-4 minutes or until relaxed and light gold. Include the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour starts to turn brilliant in color. Pour within the chicken stock, broccoli florets, carrots, and flavoring.Bring to a bubble at that point diminish warm to medium-low and stew for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and stew for another miniature. Taste and alter flavoring on the off chance that needed.
Serve with toasted dried up bread or in a bread bowl in the event that desired.
